I would buy whole pigs all the time of I was good at breaking them down. Hell, just having knives that sharp enough would be the tits. I hit mine on the stone 3-4 times a week to keep them as razor sharp as possible. You wouldn't believe the shoulder/back pain that having dull knives can cause.
