Scrambled eggs w/ hatch green chilis & chorizo, bacon, cheese and avocado + cholula on a flour tortilla that i warm on top of the eggs in the skillet. He'd fry up seasoned ground beef, add in a ton of shredded cheddar until it was a mass of cheese and meat, and then stuff up corn tortillas with this mixture. Then he'd deep fry these fuckers in lard until they were crispy (kinda like Jack In The Box) and serve them with a side of salsa and sour cream. Damn good.
